仿自然干制的青花椒产地烘干试验与工艺研究

摘    要:就自然条件下晾晒干制优质花椒的工艺过程进行了研究,确定最优晾晒争件,制定其干燥曲线;在此基础上进行烘干试验,确定工艺参数,其中第一阶段的烘房温度为47℃、热风风速为0.6~1.0m/s和混合风相对湿度为50%~60%;第二阶段烘房温度应该控制在68℃左右。

Abstract:Based on the results of a preparatory experiment in which a curve of the optimum air-drying conditions for the fresh Chinese prickly ash(Zanthoxylum achinifolium) was obtained,the optimum drying conditions in the drying house were established: in the first stage,the temperature in the drying house is 47oC,the velocity of the hot wind is 0.6-1.0 m/s and the relative humidity of the hot wind is 50-60%;in the second stage,the temperature in the drying house is raised to 68oC.
