醇提红曲红色素工艺条件的研究

摘    要:红曲中含有丰富的红曲色素,可采用浸提法从红曲米中提取红色素。对醇提影响因素(醇配比、醇提温度、醇提时间、醇提pH、醇提次数)进行了单因素实验,并对醇提温度、时间和提取次数进行了正交试验。结果表明:对影响蛋白提取率的影响主次关系依次为温度、提取次数、时间;在所试验的范围内,最佳时间40 min,最佳温度80℃,最佳提取次数2次。

Abstract:Red rice is rich in monascus pigment,which could be extracted from red rice.The single-factor experiments of factors affected ethanol-extraction were studied,and the orthogonal experiment was conducted.The results showed that the order affecting the extraction rate was temperature,frequency and time.In the experimental extent,the best condition was ethanol-extraction at 80℃,for 40 min,and extracted twice.
