栀子花固体介质干燥技术研究

摘    要:目的]研究固体介质对栀子花干燥效果的影响。方法]采用河沙和食盐2种介质对栀子花进行包埋干燥,并比较了不同蔗糖浓度浸泡花枝的效果,测定栀子花干燥后的失水率、重量变化、感观分值等指标。结果]直接包埋处理中沙埋比盐埋效果更好;花材经蔗糖浸泡后,花形与花色得到了较好保护。结论]得到了栀子花的最佳干燥方法:花枝在20%蔗糖溶液中浸泡6 h后,用河沙包埋,在60~70℃干燥箱中烘烤12 h。

Study on Drying Technology of Gardenia jasminoides Flowers by Solid Medium

Abstract:Objective]The aim was to study the drying effect of Gardenia jasminoides flower by solid medium.Method]Gardenia jasmi-noides flower was embedded and dried by sand and salt,and the effects of soaking the flower branch in different concentration of sugar werecompared,then the water loss rate,weight change,sensory scores and other quality indices of dried flowers were determined.Result]A-mong the two embedment treatments,sand embedment achieved better results than salt embedment;while sugar soaking could maintain theshape and color of the flowers.Conclusion]The optimum drying technology for Gardenia jasminoides flowers was: soaked in 20% sugar solu-tion for 6h and then embedded in sand,and at last baked for 12 h under 60-70 ℃.
