The occurrence of methionine sulfoxide in potato tubers after acid hydrolysis

Abstract:Amino acid chromatograms of freeze-dried potato powder have shown an unknown peak before the aspartic acid peak. The unknown amino acid derivative has been identified as methionine sulfoxide which is produced during acid hydrolysis of potato powder; it is not a naturally occurring component of potato protein. The presence of methionine sulfoxide after acid hydrolysis should be considered when reporting amino acid data.
