摘 要: | 采用挤压微胶囊技术对鸡精粉生产应用进行研究。以包埋率和产品质量感官为考察指标,通过试验确定壁材、辅料的选择和用量以及食用香精添加量。结果表明,挤压微胶囊法可应用于鸡精粉生产中,壁材添加量为淀粉5%,辅料添加量为食用二氧化硅0.3%,且可在保证产品风味、质量的前提下,减少20.5%食用香精添加量。

Abstract: | Study on chicken power production by using extrusion microencapsulation technology, and testing the selection and consumptionof surface materials and the consumption of edible essence, based on the em- bedding rate and sensory. The result shows that extrusion microencapsulation technology applies to chicken power production when adding 5% starch as surface material, adding 0.3% edible silica as accessories, and the quality of the chicken power can be ensure when reducing the amount of edible essence by 20.5%. |
