氮对薄壳山核桃关键香气成分含量变化的影响

摘    要:为研究氮对薄壳山核桃香气成分累积的影响,以“波尼”为研究对象,开展4水平氮肥试验(0、0.4、0.8和1.2 kg·株-1),以获取氮肥最佳用量。采用同时蒸馏萃取结合气相色谱法测定关键香气成分,验证了分析方法准确度及精密度,由于测试成本低,适合大量样品的测定。研究结果表明,低氮环境有助于“波尼”果仁中香气成分的形成与累积,高氮条件不利于香气成分的产生。不同施氮处理中6种关键香气成分含量均发生了变化,每株施氮量0.4 kg时,目标香气成分累积量处于最高水平。合理的低氮处理对薄壳山核桃香气成分的累积具有促进作用。

Effect of nitrogen on the content of key aroma components in Carya cathayensis

Abstract:In order to investigate the effect of nitrogen on the accumulation of aroma components in apocarya, four levels of nitrogen fertilizers (0, 0.4, 0.8 and 1.2 kg per plant in average) were conducted using ''Pawnee'' as the study subject to obtain the optimum amount of fertilizer. Simultaneous distillation extraction combined with gas chromatography was used to determine the key aroma components. The accuracy and precision of the analytical method were verified, and due to the low cost of the test, it was suitable for the determination of large number of samples. The results showed that low nitrogen conditions contributed to the formation and accumulation of aroma components in ''Pawnee'' kernels, while high nitrogen conditions were not conducive to the production of aroma components. The contents of six key aroma components varied among the different nitrogen treatments, with the highest accumulation of the target aroma components occurring at 0.4 kg of nitrogen per plant. The accumulation of aroma components in apocarya was promoted by reasonable low nitrogen treatments.
