摘 要: | 以响应面试验设计方法研究了胃蛋白酶对鱼鳞蛋白的水解特性.得到拟合良好的响应面方程,在选定范围内胃蛋白酶水解鱼鳞蛋白的最优条件为:pH=1.5,时间为6h,温度为60℃,此时蛋白得率的最优值为164.0mg/g原料。

Abstract: | The hydrolysis characters of pepsin on fish scale protein was studied with responsesurfaee method, which leads to a fitting equation between protein extract rate and pH, time, temperature. The results shows that the optimized conditions for fish scale protein hydrolysis by pepsin is as follows: pill. 5, 6 hours, 60℃. Under the optimized conditions, the best extract rate is 164.0 mg/ g scale. |
