| 摘 要： | 电子舌是以多传感器阵列为基础,利用传感阵列感测液体样品的特征响应信号,通过信号模式识别处理以及专家系统学习识别,对样品进行定性或定量分析的一类新型分析测试仪器。介绍了电子舌的研究进展以及在食品各个方面的应用研究状况,电子舌作为一种新型的智能感官分析检测技术,非常适合现代化食品工业整体特征分析的要求,在多类食品整体质量区分辨识中体现出良好的应用效果,具有巨大的潜在应用价值。

| Abstract: | Electronic tongue is a modern qualitative and quantitative analysis instrument,which consists of multi-sensors array for detecting signal and uses advanced mathematical procedures for signal processing.The paper described the development and application of the electronic tongue research.The electronic tongue is very suitable for modern food industry analysis requires and displayed a good application and latent value in food integral quality discrimination. |
