野生金荞麦的营养成分及其饲喂对猪肉品质的影响

摘    要:为野生金荞麦的利用拓宽新的途径,测定了野生金荞麦的营养成分,并进行了饲喂对猪肉品质的影响试验。结果表明:野生金荞麦青绿饲料含有较高的粗蛋白、钙、磷和丰富的氨基酸以及较低的粗纤维、中性和酸性洗涤纤维。用野生金荞麦代替10%~14%的全价日粮喂猪,与对照组(只喂全价日粮)相比,可显著降低猪肉的滴水损失和提高系水力,极显著提高肌间脂肪含量和肌肉嫩度,提高天门冬氨酸和谷氨酸含量,降低胆固醇含量。表明,用野生金荞麦青绿饲料代替部分精料饲养猪,能提高猪肉的品质及其食用保健品质。

Abstract:The effect of wild bitter buckwheat on pork quality was studied based on determining nutrient components of wild bitter buckwheat to broaden its new utilization path.The results showed that the green wild bitter buckwheat was of high crude protein,calcium and phosphorus content,abundant amino acid,lower content of crudefibre,neutral detergent fiber and acid detergent fiber.The ration with 10%~14% green wild bitter buckwheat could reduce pork drip loss and raise pork water holding capacity significantly,increase pork intramuscular fat content and muscle tenderness very significantly,improve pork aspartic acid and glutamic acid content and reduce pork cholesterol content.Therefore,the green wild bitter buckwheat could raise pork quality and edible healthy quality.
