摘    要:茶黄素是红茶发酵过程中多酚类化合物氧化聚合的产物,是红茶品质优劣的标志性成分之一。由于茶黄素具有独特的苯骈卓酚酮结构和较高功能活性的酚羟基团,其在抗菌、抗氧化、抗癌等医药功效方面均优于其他水溶性多酚类物质。本文综述了近年来国内外茶黄素保健功效的研究进展,为其在医药与食品等领域的研究与开发利用提供基础资料。

Abstract:Theaflavins(TFs)are the products produced by the oxidative polymerization of polyphenols during the fermentation of black tea,and are one of the symbolic components of the quality of black tea.Due to theaflavins have a unique structure of benzotropolone and a highly functional phenolic hydroxyl group,they are superior to other watersoluble polyphenols in antibacterial,antioxidant,anticancer and other medical effects.This paper systematically reviews the research progress on health benefits of theaflavins at home and abroad in recent years,which provides basic information for its research,development and utilization in the fields of medicine and food.
