我国冬小麦主要品种(系)品质状况分析

摘    要:选取我国北部和黄淮冬麦区主要品种和种质材料631份,对5个品质性状进行分析,结果表明,我国冬小麦品种容重偏高;蛋白质含量和湿面筋含量也相对较高,达到弱筋标准的分别仅占供试品种(系)的2.53%和0.95%;吸水率和稳定时间以中等水平为主,达到强筋标准的分别占供试品种(系)的21.08%和22.19%,达到弱筋标准的分别占供试品种(系)的16.00%和19.49%。品种分类,我国冬小麦主要以中筋小麦为主,占供试品种(系)的85.11%;强筋小麦有一定发展,占供试品种(系)的14.10%;弱筋小麦发展较慢,仅占供试品种(系)的0.79%。

Investigation on Quality Characteristics of Winter Wheat in China

Abstract:631 wheat varieties in North and Huang-Huai Winter Wheat Area were selected,five quality traits were studied.The results showed that,winter wheat had the trait of higher test weight;protein content and wet gluten conte were at relatively high.Only 2.53% and 0.95% of the wheat varieties met the requirement of mid-gluten wheat.The majority of flour water absorption rate and stability time were at intermadiate level,21.08% and 22.19% of the wheat varieties met the requirements of strong gluten wheat,16.00% and 19.49% of them met the requirement of mid-gluten wheat.Cultivar classification showed that 85.11% varieties were the weak gluten wheat,14.10% were the strong gluten wheat,only 0.79% were the mid-gluten.
