湖北省名优绿茶品质特点研究

摘    要:为了解湖北省名优绿茶品质特点,选取湖北省不同茶区15只具代表性茶样,分别进行感官审评、生化分析、矿质元素含量分析和氨基酸组分分析。结果表明,湖北省名优绿茶的茶多酚含量为12.70%~16.90%,游离氨基酸总量为3.00%~5.80%,咖啡碱含量为2.70%~4.20%,水浸出物含量为43.00%~49.60%,儿茶素总量为12.04%~15.74%,儿茶素品质指数为2.81~4.93,茶氨酸含量占游离氨基酸总量的30.12%~46.52%。测定结果中与茶叶品质正相关的因子含量较高,反映出湖北省名优绿茶品质总体较好。茶样间茶汤色泽、游离氨基酸总量、钾、钙、锰、铁、铝、钼元素变异较大,表明这些因子更易受茶树品种、栽培环境和加工工艺的影响。
