树脂纯化前后玫瑰花红色素的稳定性研究

摘    要:[目的]为玫瑰花红色素的实际应用提供理论依据。[方法]通过研究贮藏条件、不同添加剂和金属离子对纯化前后玫瑰花红色素稳定性的影响,比较纯化前后玫瑰花红色素的稳定性。[结果]该色素稳定性由强到弱的贮藏条件依次是:低温避光>室温避光>室温光照。纯化后的色素在不同储藏条件下的稳定性均高于纯化前的。0.02%~0.04%抗坏血酸对色素的储藏不利,而且对纯化后色素的破坏性强于对纯化前色素的。0.02%~0.04%的亚硫酸钠对色素的稳定性有增强作用。在测试时间内,纯化后的玫瑰花色素在Fe2+、Sn2+离子溶液中保存8 d后的吸光值大于未添加金属离子的溶液,在Pb2+和Mg2+离子溶液中,色素的保存率为75.6%和77.5%。[结论]与纯化前的色素的稳定性相比,纯化后的色素在一些常见离子中的稳定性较强。

Abstract:[Objective] The aim of the research was to supply theoretical basis for the practical application of rose red pigment.[Method] The stabilities of rose red pigment before and after purification were compared through researching the effects of storage condition,different additives and metal ions on its stability before and after purification.[Result] The stabilities of the pigment under different storage conditions in order were: low temperature in dark > room temperature in dark > room temperature in light.The stabilities of purified pigment under different storage conditions were higher than that of unpurified pigment.0.02%~0.04% ascorbic acid was unfavorable for the storage of pigment and its destructiveness on purified pigment was stronger than that on unpurified pigment.0.02%~0.04% sodium sulphite had increasing effect on the stability of pigment.In the testing time,the absorbance value of purified rose red pigment stored in Fe2+ and Sn2+ ion solution for 8 d was bigger than that in the solution without metal ions;in Pb2+ and Mg2+ ion solutions,the preserving rates of pigment were 75.6% and 77.5%.[Conclusion] Compared with the stability of unpurified pigment,the stability of purified pigment in some common ions was stronger.
