淀粉老化动力学研究述评

摘    要:通过对淀粉的老化机理、晶体的成核与成长过程和Avrami模型的分析,阐述了淀粉老化的动力学特性,分析了淀粉分子特性、流动性、理化特性、晶体结构等与淀粉老化动力学特性的关系,并讨论了物态转变、有序和无序结构的形成及发展对淀粉质系统硬化的影响。

Abstract:Retrogradation kinetic properties of starch were studied by analyzing retrogradation mechanisms and Avrami model. The parameters of Avrami exponent n and rate constant k assign special meanings. n and k values provide the information of the properties of nucleation and growth and the shape of crystalline grains which relates to the physicochemical properties and molecular structure of starch during retrogradation. As Avrami equation is not an ideal model to describe retrogradation properties, the amorphous structure such as glass transition due to the loss of mobility when temperature dropped and the ordered arrangement such as the forming of gelatin during retrogradation, should be considered to interpret the hardness of starch. A more accurate and realistic model could be obtained by studying the state transition, amorphous and ordered structure, gelatin properties, network structure of starches during retrogradation.
