| 摘 要： | 研究了EDTA螯合脱除鲢鱼鱼鳞中钙离子的工艺条件。在单因素试验基础上,采用正交试验优化得到最优的脱钙工艺条件:鱼鳞与EDTA料液比1:30,EDTA溶液浓度0.17 mol/L,浸泡时间30 h;在该最优条件下,脱钙率为94.11%,表明EDTA脱钙效果良好,脱钙工艺条件切实可行。

| Abstract: | The process conditions of EDTA chelation removal the calcium ions from the silver carp fish-scale are studied.Based on the single-factor test,the optimal decalcification process conditions are got by orthogonal test:the ratio of fish scale and EDTA 1:30,concentration of EDTA solution 0.17 mol/L,soaking time 30 h,under the optimal conditions,decalcification rate 94.11%.The results show that EDTA decalcification is well,decalcification process conditions are practicable. |
