摘    要:乳酸菌是被公认的安全食用菌株,其合成的胞外多糖由于具有良好的物理学特性和生物学活性,受到人们的广泛关注。了解多糖合成途径和糖基代谢过程对于改变多糖结构与产量具有重要意义。就乳酸菌胞外多糖生物合成途径、遗传调控以及在控制多糖产量与结构方面的研究现状进行简述。

Abstract:Lactic acid bacteria(LAB) are generally recognized as safe.Moreover extracellular polysaccharide(EPS) produced by LAB have excellent physical properties and biological activity,which arises people's wide concern.Therefore the study of polysaccharide biosynthetic pathways and suger catabolism were very useful to improve the production and structure of EPS.This article provides a review of EPS biosynthetic pathways,genetic regulation,and the research progress of polysaccharide production and structure engineering.
