黄瓜不同品种盐渍的适应性评价

摘    要:以45份黄瓜品种为试材,采用相同工艺进行盐渍对比试验,对盐渍成品的感官品质、安全品质和营养品质进行分析测定,采用模糊综合评判法统计分析其综合品质。结果表明,适合盐渍的黄瓜品种有D0847、HN53-61-1-3、D0842、津春5号、HN53-61-1-2,同时对适宜品种的植物学性状进行总结归纳。

Abstract:Total 45 cucumber cultivars were used for contrasting research in this study under the same pickled condition. The sensory quality, safety quality and nutritive quality of the production were analyzed and the comprehensive quality of pickled cucumber was evaluated by fuzzy comprehensive evaluating method. The results showed that D0847, HN53-61-1-3, D0842, Jinchun5, and HN53-61-1-2 were suitable for pickled, and also summed up their botanical characters.
