牛初乳中几种重要酶及其生物功能的研究进展

摘    要:牛初乳是指奶牛产犊后几天内所分泌的乳汁,含有丰富的营养成分。目前已在初乳中测出50余种酶,它们具有重要的生物功能。因此,牛初乳不仅是新生幼儿及仔畜最理想的食品,也是优良的纯天然保健食品。笔者介绍8种牛初乳中存在的酶,并对其功能和酶活力变化作简要阐述。

Abstract:Bovine colostrums which are rich in nutrition is the milk that the cow secretes in a few days after parturition.Now scientists have already discovered over 50 kinds of enzymes in bovine colostrums.They have important biological function.So bovine colostrums are not only the best food for new-born infant,but also the excellent natural health food.In this paper,eight kinds of enzymes existing in colostrums are introduced,and the function of enzymes and enzyme activity change are summarized in brief.
