红富士苹果冰温贮藏的研究

摘    要:研究了红富士苹果在普通冷藏(0℃)和冰温贮藏(-1℃,-1.4℃)条件下果实生理与贮藏品质的变化。结果表明,与0℃普通冷藏相比,冰温贮藏明显地抑制了红富士苹果的呼吸作用及乙烯的释放速率,较好地保持了组织细胞膜的完整性,延缓了果实后熟与衰老进程,贮藏8个月后的果实仍保持了良好的质地、风味与品质;在冰温范围内,温度越低贮藏效果越好。

Abstract:The changes of physiological and storage quality of fuji apples at cold storage(0 ℃) and ice-temperature storage(-1 ℃,-1.4 ℃) conditions were investigated in the paper.The results showed that,compared with cold storage(0 ℃),ice-temperature treatments significantly decreased respiration intensity and ethylene release rate,maintained the membrane integrity well and delayed fruit ripening and senescence process.After ice-temperature storaged for 8 month,the fruits kept good texture flavor and quality.Within ice-temperature,in the case of low temperature has better storage effect.
