| 摘 要： | 通过对丰年虫鸡蛋中的灰分、水分、脂肪、蛋白质、氨基酸、矿物质、类胡萝卜素等成分的测定,比较其与普通鸡蛋的差异。结果表明,丰年虫鸡蛋的蛋黄/蛋清比值明显高于普通鸡蛋;同时丰年虫鸡蛋所含人体必需氨基酸组成更为合理,矿物质等各种营养成分均高于普通鸡蛋,特别是类胡萝卜素和硒含量分别为6.6mg/kg和280.68μg/kg,类胡萝卜素和硒含量分别是普通鸡蛋3倍和1.79倍。 |

| Abstract: | In this research the nutrition value of Chirocephalus diaphanous eggs was compared with that of ordinary eggs by analyzing ash,water,fat,protein,amino acids,minerals,carotenoids and other nutrition components.The results show that the ratio of Chirocephalus diaphanous egg yolk / egg white was significantly higher than that of ordinary eggs.The amino acids composition of Chirocephalus diaphanous eggs was more reasonable and minerals and other nutrients were higher than ordinary eggs.Especially,the carotenoids and selenium contents in Chirocephalus diaphanous eggs were 6.6 mg/kg and 280.68 μg/kg,which were three times and 1.79 times higher than that in the ordinary eggs,respectively. |
