Abstract:Furfuryl mercaptan is a major component in roast coffee aroma or an aromatic ingredient for artifical coffee. It can be preparated by reaction of 2-furfuryl alcohol with equimolar amounts of thiourea in acid medium to give furfuryl isothiourea, and then addition of sodium hydroxide aqueous solution. The reaction mechanism is discussed.
