摘    要:概述了国内外气调包装技术的研究现状,阐述了肉品气调包装保鲜的机理及其各种影响因素,讨论了实际应用过程中应注意的问题,并展望了气调包装未来的发展前景。

Abstract:This paper summarizes the research status of modified atmosphere packaging(MAP) at home and abroad,elaborates on the mechanism of fresh meat MAP and its various influencing factors.The problems in the practical MAP application are discussed,and it is pointed out that MAP is one important developmental direction of chilled meat packing in China in the future.
