摘    要:在单因素试验基础上,用正交实验对阳荷红色素提取工艺进行筛选,得出最优提取条件:在80℃下,用40倍于阳荷粉的50%的酸性乙醇,恒温提取90 min。同时,研究了光照、温度、pH、糖类、防腐剂、氧化剂、还原剂以及金属离子对色素稳定性的影响。结果表明:阳荷红色素除在防腐剂(苯甲酸钠)、强氧化剂(H2O2)及Fe3+环境中稳定性较差外,其他条件下稳定性良好。此外,还对色素的光谱性质、染色效果以及最佳提取条件的重现性进行了研究,效果良好。

Abstract:Based on single factor experiment,the extraction technique of red pigment from the wild Zingiber strioatum were optimized by orthogonal experiment in the present investigation.The results showed that the best extraction parameters were as follows: extraction temperature 80 ℃,time 90min,proportion of material to 50% ethanol 1∶40,pH 1.The effects of different conditions,such as light,temperature,pH,carbohydrates,preservatives,oxidant,reducer and metallic ions on the stability of the pigment were also discussed.The red pigment from the Zingiber strioatum was stable in the exception of the use of sodium benzoate,strong oxidizing property H2O2 and iron ion.Additionally,the spectral quality,dyeing effect,and reproduction quality of the best extraction condition was also investigated herein.
