摘 要: | 谷氨酰胺转胺酶具有催化酰基转移,使蛋白质分子内和分子间交联,提高蛋白质营养价值的功能,是一种应用前景良好的新型食品添加剂。主要介绍了谷氨酰胺转胺酶的作用机理、生产及其在食品工业中的应用。

Abstract: | Transglutaminase,which could catalyze an acyl transfer and generate covalent cross-links between protein molecules or intermolecular covalent cross-links to increase nutritional value of protein,is a new food additive with important potential application values.The mechanism,production of transglutaminase and its application in food industry were introduced. |
