摘    要:菌落总数是食品微生物检测的一个重要项目,也是评价食品卫生安全性最常用的指标之一,其结果的准确度和可信度直接影响评价的可靠性。该文总结了食品中菌落总数的国标法检测注意事项,并介绍了近年来常用的几种食品菌落总数的快速检测技术。

Abstract:The aerobic plate count is important in the food microbiological examination and widely used in evaluation of food hygiene and safety.The reliability of evaluations is depended on the accuracy and the credibility of the aerobic plate count.This paper summarized some cautions on the use of national standard method for aerobic plate count in food microbiological examination,and reviewed some common rapid detection techniques for aerobic plate count in food microbiological study in recent years.
