摘    要:为探讨玉米芯综合利用的潜力,以固体方式进行黑曲霉和啤酒酵母的发酵试验,通过正交试验研究发酵产物营养价值,其最佳发酵条件为:在质量分数为80%的玉米芯和20%的麸皮混合物中,加入含(NH4)2SO4质量分数2%,MgSO4.7H2O质量分数0.05%,KH2PO4质量分数0.01%的营养液,初始水分含量为48%,pH值为5.5,接种黑曲霉,接种量为10%,30℃培养48 h后接种啤酒酵母,接种量为10%,黑曲霉培养72 h后添加啤酒糟,添加量为玉米芯量的50%,再发酵72 h,产品粗蛋白和粗脂肪含量分别达14.42%和2.29%,净增量分别为10.21和1.50个百分点,粗纤维含量从31.12%降至23.02%。

Abstract:In order to investigate the comprehensive ultiliation value of corn cob,the experiment was conducted with Aspergillus niger and Sacchromyces cerevisiae by solid-state fermentation,the nutritive value of fermentation product was studied by orthogonal test.The optimal fermentation conditon was: A nutrient solution containing(NH4)2SO4 2%,MgSO4·7H2O 0.05%,KH2PO4 0.01% was added into the mixture of 80% corn cob and 20% bran,the initial water content was 48%,pH 5.5.Aspergillus niger was added with the inoculation of 10%,culturing under 30 ℃ for 48 hours and Sacchromyces cerevisiae was added with the inoculation of 10%,the brewer's grains were added and accounted for 50% of the content of corn cob when Aspergillus niger had been added for 72 h,then fermented for another 72 h,the crude portein and crude fat was up to 14.42% and 2.29% respectively after fermentation,the net crude protein and crude fat were 10.21% and 1.50%,the crude fiber decreased from 31.12% to 23.02%.
