| 摘 要： | 试验结果表明:斑点叉尾鮰的含肉率为60.54%;肌肉含水率为71.59%;粗蛋白为17.04%;粗脂肪含量为10.22%;灰分为1.13%。矿物质含量中P、Ca、Fe、Cu和Mn的含量较高,而Pb和Cd的含量较低。

| Abstract: | The results showed that the rate of flesh content in whole body was 60.54%, moisture of muscle 71.59%, crude protein 17.04%, crude fat 10.22% and ash 1.13%. Among the mineral, the content of P,Ca,Fe,Cu and Mn was higher than that of Cd and Pb. |
