高纯度蛋黄卵磷脂的提取工艺研究

摘    要:目的]探索蛋黄卵磷脂的最佳提取工艺。方法]以鸡蛋黄为原料,采用无机盐复合沉淀法精制卵磷脂,通过单因素试验与正交试验,优化卵磷脂的最佳提取工艺。结果]卵磷脂的最佳提取工艺为:蛋白酶添加量0.06%,乙醇浓度90%,提取温度25℃,金属离子浓度40%。结论]无机盐复合沉淀法是一种高效、经济的提取方法。

Abstract:Objective]The study aimed to explore the best extraction technology conditions of egg yolk lecithin. Method]With egg yolk as raw material,the best extraction technology of egg yolk lecithin was optimized by method of complex precipitation with inorganic salts. And its optimum conditions were found by the single factor experiment and orthogonal test. Result]The optimum conditions of egg yolk lecithin were as follows:the amount of protease added 0. 06% ,90% ethanol concentration for 25 ℃ and metal ion concentration of 40%. Conclusion]The complex precipitation with inorganic salts was a more effective and economical method to extract egg yolk lecithin.
