几种十字花科蔬菜中芥子碱硫氰酸盐含量的研究

摘    要:目的]对生活中常见的几种十字花科蔬菜中芥子碱硫氰酸盐含量进行测定.方法]建立高效液相色谱检测芥子碱硫氰酸盐的条件,并采用高效液相色谱法对十字花科蔬菜白萝卜、红萝卜、青萝卜、紫甘蓝、西兰花、花椰菜、大白菜、小白菜、卷心菜、油菜、油麦菜中的芥子碱硫氰酸盐进行定性、定量分析,并初步考察白萝卜中芥子碱硫氰酸盐稳定性.结果] HPLC结果显示,几种十字花科蔬菜中白萝卜、红萝卜、青萝卜、紫甘蓝、西兰花、花椰菜、油菜、油麦菜中均含有芥子碱硫氰酸盐,其中白萝卜中芥子碱硫氰酸盐含量最高(0.006 7%),紫甘蓝中芥子碱硫氰酸盐含量次之(0.002 6%),红萝卜、青萝卜、西兰花、油菜、油麦菜、花椰菜中虽然含有芥子碱硫氰酸盐但含量较低超出检测范围,大白菜、小白菜、卷心菜中未检测到芥子碱硫氰酸盐.结论]芥子碱在十字花科蔬菜中含量差别较大,白萝卜中的芥子碱硫氰酸盐含量最高.

Study on the Content of Sinapine in Common Cruciferous Vegetables

Abstract:Objective] To detect the sinapine content of several daily consumption vegetables.Method] Establish high-performance liquid chromatography (HPLC) assay conditions of sinapine,using HPLC method to analyze the qualitative and quantitative of sinapine in the cruciferous vegetables(white radish,carrot,radish,purple cabbage,broccoli,cauliflower,Chinese cabbage,pakchoi,cabbage,rape,lettuce),detect the sinapine stability of white radish.Results] HPLC results showed that white radish,carrot,radish,purple cabbage,broccoli,cauliflower,rape,lettuce contain sinapine.Sinapine content in white radish mustard is the highest(0.006 7%),followed by purple cabbage (0.002 6%),the sinapine content in carrot,radish,broccoli,rape,lettuce,cauliflower is too low (below the detection limit),the sinapine in Chinese cabbage,pakchoi,cabbage is not detected.Conclusion] Sinapine content vary greatly in cruciferous vegetables,white radish contain the highest sinapine.
