果汁冷冻浓缩加工技术和设备研究进展

摘    要:浓缩果汁是一种主要的水果加工制品,对荔枝汁、西瓜汁等热敏性果汁而言,采用常规热浓缩技术容易产生品质劣变。而采用冷冻浓缩技术加工的果汁能很好地保存水果的营养风味,加工能耗较低,具有广阔的市场前景。目前德国GEA等国外公司有成熟的冷冻浓缩商用设备,国内冷冻浓缩技术的大型设备在冰晶起晶、养晶、冰晶分离、冰晶清洗等方面还存在差距,导致果汁浓缩倍数不高、冰晶的果汁夹带率高、设备效率低等问题。建议国内重点研究大型设备的高效起晶养晶技术和冰晶分离技术及冰晶清洗技术,开发高品质冷冻浓缩果汁产品。

Abstract:Concentrated fruit juice is a main kind of fruit processing products.For the heat sensitive subtropical fruit juice such as litchi juice or watermelon juice,the quality of concentrated fruit juice is easy to deteriorate after heat concentration.The fruit juice produced by freeze concentration technology can preserve the nutritional flavor of fruit,at the same time,the energy consumption is low,freeze concentrated fruit juice has a broad market prospect.At present,some companies such as GEA have mature commercial equipment.However,there is still a gap in the technology of ice crystal initiation,ice crystal separation and ice crystal cleaning in China,resulting in low concentration multiple and high ice crystal rate of juice.It is suggested that the domestic concentrated juice equipment focus on the research of high-efficiency crystallization technology,ice crystal separation technology and ice crystal cleaning technology to develop high-quality concentrated juice products.
