摘    要:利用色谱-质谱联用仪、氨基酸自动分析仪,测定了不同负载量的套袋鸭梨果实内的挥发性物质和游离氨基酸成分及含量。结果表明,不同负载量的套袋鸭梨果实内均含有22种挥发性成分,经解析并与标准图谱对照,鉴定出21种化合物,有5种酯类物质,7种烷类物质,5种烯类物质,3种醇类物质,1种酚类物质。其中酯类物质为主要成分,相对含量在35 79%~49 33%之间;检测出13种游离氨基酸,其中天门冬氨酸、苏氨酸、丝氨酸比例最高。在一定负载量范围内,挥发性物质含量随负载量增加而提高,游离氨基酸总含量随负载量增加而下降。

Abstract:The volatile constituents and dissociation amino acid contents in bagged fruit of Yali pear trees with different yields were studied by GC/MC combine device and automatic analytic machine for amino acids. The results indicated that there were 22 volatile constituents. After the comparison with standard atlas, 21 compounds were identified, among which there were 5 kinds of esters, 7 kinds of alkyls, 5 kinds of olifinic, 3 kinds of alcohol and 1kind hydroxybenzene. And esters were the main constituents, whose contents were between 35.79% and 49.33%. 13 dissociation amino acids were identified in the fruit, among which the percents of Asp, Thr and Ser were the largest. The volatile constituents contents increased and the dissociation amino acids content declined with the adding of the yield.
