摘 要: | [目的]为水蛭的深加工提供可靠依据。[方法]以宽水蛭(Hirudo breviformis)为试验材料,在试验用冷冻干燥机上对其进行干燥,选择加工水蛭的最佳工艺参数。[结果]结果表明,最佳工艺参数为:冻结时间5.2 h、冻结终点温度-27℃、冷阱温度-70~-45℃、真空度4~30 Pa、水蛭冻干最终温度30℃、含水量低于5%、干燥时间16.0 h时,冻干产品的含水量为2.19%。真空冷冻干燥的水蛭保持了原有的色泽和形状。[结论]该方法可有效抑制热敏物质的变质,为水蛭的深加工提供可靠依据。

Establishing of Optimal Technique for Freeze-drying Processing of Hirudo breviformis |

Abstract: | [Objective] The study aimed to provide credible basis for deeply processing of Hirudo breviformis.[Method]With Hirudo breviformis in 2 years old as experiment materials,Hirudo breviformis were dried in vacuum freeze-drying equipment to establish the optimum technics parameter.[Result]The results indicated that water content of freeze-drying product was 2.19% under the optimum technics parameters which were freezing time of 5.2 h,terminal freezing temperature of-27 ℃,cryotrap temperature of-70——45 ℃,pressure of drying room of 4-30 Pa,freeze-drying terminal temperature of Hirudo breviformis of 30 ℃,water content less than 5%,and freeze-drying time of 16.0 h.The freeze-drying Hirudo breviformis in vacuum kept the inherent color and shape.[Conclusion]This method can effectively control the deteroprate of substances which are sensitive to heat.At the same time,it will provide reliable theoretical evidences for further development of Hirudo breviformis. |
