鲁烟白猪胴体性能肉质性状相关程度及其随体质量变化规律

摘    要:研究测定85~107 kg体质量阶段27头鲁烟白猪的胴体品质和肉质特性,以分析鲁烟白猪胴体、肉质性状随体质量的变化规律及其相关程度.结果表明,鲁烟白猪在85~90 kg阶段屠宰瘦肉率最高为62.72%,分别比其他3组(91~95 kg组、96~100 kg组、101~107 kg组)提高1.62%(P>0.05)、0.34%(P>0.05)和2.40%(P>0.05);在91~95 kg阶段屠宰肉品质优良,肌肉pH6.11,肉色和大理石纹评分最高分别为3.26和 3.11,肌内脂肪含量最高为2.38%,肌肉失水率最低为13.89%.胴体和肉质性状间相关程度有强有弱,相关系数有正有负.相同性状间呈较强正相关,相反性状间呈较强负相关.在85~107 kg阶段,除屠宰率与体质量之间呈显著的回归关系外,其他各项指标与体质量间的线性相关不明显.综合分析认为,鲁烟白猪的适宜上市屠宰体质量为91~95 kg.

Abstract:Carcass performance and meat quality of 27 Luyan white pigs of 85~107 kg body weigh stage were studied.And the changes of carcass and meat quality as body weight changed were analyzed.The objectives were to investigate appr opriate slaughter weight of Luyan white pigs.Results indicated that lean percent of the stage of 85~90 kg slaughter weight was the higher than that of others,it was 62.72%,increased by 1.62%(P>0.05),0.34%(P>0.05)and 2.40%(P>0.05) as compared with the other three groups,respectively.When the slaughter weight was 91~95 kg,the meat quality was fine,pH was 6.11,meat color and marbling score were 3.26 and 3.11,intramuscular fat content of muscles was 2.38%,wester loss was 13.89%.The correlation degree of carcass traits and meat traits are strong or weak,correlation coefficients had positive and negative.The same traits had stronger positive correlation,the adverse traits had stronger negative correlation.In the 85~107 kg stage,assumed the remarkable return relations besides between the yield of carcass and the body weight,other each target and the body weight linear correlation was not obvious.Comprehensive evaluation showed that the reasonable slaughter weight stage of Luyan white pigs was 91~95 kg.
