摘    要:以新鲜香猪管状骨为试验材料,通过粗粉碎,冷冻干燥,加液氮细粉碎,制得细度为150~400目,白色,手感细腻柔滑,略有鲜骨特殊风味,无杂质的香猪骨粉,其水分含量为9.37%,蛋白质含量为19.32%,总脂肪为1.57%。低温条件下,选择氯仿/甲醇(1+1)二相溶剂、无水乙醇和石油醚三种脱脂剂对香猪骨骨粉进行脱脂,依据质量...

Abstract:An experiment was carried out with fresh Guizhou Xiang-pigs' tubular bones which were freezed,dried,and then added liquid nitrogen to crushed into 150 to 400 mesh fineness of bone meal.There were somewhat special flavor like the fresh meal,white,feeling silky,and without impurities.In which,there were 9.37% moisture,19.32% protein,and 1.57% total fat.The chloroform/methanol(1 ∶ 1) two phase solvent,anhydrous alcohol and petroleum ether three kinds of solvents were chosen to degrease the meal at low temperature condition.,The degreasing effect of solvents was evaluated by quality loss percentage of the meal protein.Results shows that:the degreasing effect of chloroform/methanol(1 ∶ 1) was better than those of anhydrous alcohol and petroleum ether methods.On base of single factor experiment,taking the time(h),the ratio of liquid to raw material(mL ∶ g) as independent variables,and the protein content in degreased bone meal as response value,the degreasing conditions of extracting BMP from Guizhou Xiang-pigs' bone meal were selected and processed optimization with Design Expert 6.0 software.The result indicate that appropriate time of degreasing fat was 4.2 h,and the appropriate ratio of liquid to raw materials was 6(24mL ∶ 4g) at 0 to 4 ℃.
