食品物理加工技术专业课实验教学与探讨

摘    要:《食品物理加工技术前沿》是食品科学与工程专业的专业课程,其知识体系复杂,实践性较强,其相关实验课则是学生对复杂理论知识的实践和巩固,也是培养学生动手能力、分析问题和解决问题能力的重要途径。分析了食品物理加工技术专业课实验的教学现状和存在的问题,从精选实验内容、合理安排实验,严格要求、规范实验过程,传统实验教学与其他实验教学模式相结合,完善成绩评定机制,考查综合能力等方面入手进行实践和探讨,使得学生在规定课时内带着兴趣完成实验,为培养高素质的专业食品人才打下坚实的实验操作基础。

Experimental Teaching and Discussion of Food Physics Processing Technology
Abstract:“Frontier of Food Physical Processing Technology” is a professional course for food science and engineering.This course has a complex knowledge system and strong practicality.The relevant experimental courses could help students practice and consolidate complex theoretical knowledge,and are also an important way to cultivate students′ hands-on ability,and ability to analyze and solve problems.The teaching status and existing problems of Food Physics Processing Technology Specialized Course experiment were analyzed.Furthermore,conduct practice and discussion were finished from four aspects,including selection of experimental content and reasonable arrangement of the experiment,strict requirements of standardizing experimental process,combination of traditional experimental teaching and other experimental teaching modes,improvement of performance evaluation mechanism and discussion of comprehensive ability.It could enable students to complete experiment with interest in the prescribed class time.It hopes to lay a solid experimental operation foundation for cultivating high-quality food majors.
