果蔬中抗坏血酸含量的测定

摘    要:分别采用2,6-二氯靛酚钠法、高锰酸钾滴定法和紫外分光光度法测定果蔬中抗坏血酸的含量,通过对比研究,优选出测定果蔬中抗坏血酸含量的方法为分光光度法。

Abstract:The contents of ascorbic acid in vegetables and fruits were determined with 2,6-dichlorophenolindophenol sodium,potassium permanganate titration,and UV-spectrophotometer method respectively,the optimal method of determination of ascorbic acid content in vegetables was obtained by comparative study.
