果蔬采后硬度变化研究进展

摘    要:综述了细胞壁变化对果蔬采后硬度影响的研究进展,介绍了细胞壁的构成及组成成分,分析了细胞壁变化导致果蔬采后硬化和软化的原因,阐述了木质素合成代谢相关酶对果蔬采后硬化的影响和细胞壁降解相关酶对果蔬采后软化的影响,以期为果蔬保鲜技术及其机理的研究提供参考。

Research Progress on Firmness Change of PostharvestFruits and Vegetables
Abstract:The research progress on the effect of cell wall change on postharvest firmness of fruits and vegetables was reviewed. The composition and components of cell wall were introduced. The reasons of postharvest hardening and softening of fruits and vegetables caused by changes in cell wall were analyzed. The effects of lignin biosynthesis related enzymes on postharvest hardening of fruits and vegetables and the effects of cell wall degradation related enzymes on post-harvest softening of fruits and vegetables were discussed in order to provide references for the study of fresh keeping technology and mechanism of fruits and vegetables.
