奶味香精分析技术研究进展

摘    要:随着我国食品工业的快速发展,食品质量及风味档次也在逐步提升、丰富,香精正在发挥着不可替代的作用。而奶味香精作为当今食品工业中应用最为广泛的香精之一,在香精运用中更越来越占据重要地位。但由于奶味香精中风味物质组成较其他食用香精复杂得多,而且含量极少,所以奶味香精香气成分的分离不仅是个重点而且是个难点。随着科学技术水平的不断提升和有关部门专业人士的倾心研究,奶味香精分析技术的发展正在不断的完善与改进。就奶味香精分析技术的重要性、种类、意义予以仔细剖析,旨在为此项研究进展提供一个阶段性的总结,希望能在我国奶味香精分析技术研究进展的道路上起到一定的作用。

Abstract:With the rapid development of industry of our country food, food quality and flavor quality are also gradually improve, rich flavor, is playing an irreplaceable role. And milk flavor in food industry as the most widely used one in essence flavor, use more increasingly occupy an important position. But because the milk flavour flavor composition than other food flavor is more complex, and the content is extremely low, so milk flavor aroma component separation is not only a key and difficulty. Along with the science and technology level rising and the relevant professional insider research, milk flavor analysis technology development is constantly improved and perfected. In this paper, the importance of analysis techniques for milk flavor, variety, meaning be careful analysis, aims to study progress in providing a periodic summary, in the hope of our country milk flavor analysis technology research progress on the way to play a certain role.
