蜂王幼虫的营养成分分析

为了了解蜂王幼虫营养成分的含量和质量,为开发利用其资源提供依据,在分别按国标测出营养成分含量后,用氨基酸评分(AAS)、化学评分(CS)和必需氨基酸指数(EAAI)评价氨基酸质量,与常见动物性食品营养成分进行对比分析。结果发现蜂王幼虫中水分含量占总质量的78.97%,粗脂肪、粗蛋白各占其干重的18.64%和55.80%,18种氨基酸总含量为46.67g/100g干重,必需氨基酸含量占氨基酸总量的49%,必需氨基酸与非必需氨基酸含量(NEAA)的比值为0.98。AAS和CS均显示蜂王幼虫第一、二限制氨基酸为蛋氨酸+胱氨酸、苏氨酸,EAAI为76.16,同时显示蜂王幼虫中含有丰富的维生素和矿物质元素。由此可见蜂王幼虫是一种营养价值较高的食品资源,具有较高的开发利用价值。

Analysis of Nutrition Composition on Queenbee Larvae

To analyze and evaluate the nutrition compo- sition of queenbee larvae, so as to provide evidence for developing new resource food. Measured the nutrients concentration respectively of queenbee larvae by National Standards. The quality of amino acids was evaluated by amino acids score （AAS）, chemical score （CS）and essential amino acid index（EAA I）, and then these results were com- pared with other most common animal foods. The content of water in queenbee larvae was 78.97%. The crude fat and protein occupied 18.64% and 55.80% of its dry weight respectively. The total content of 18 amino acids was 46.67 mg/100 g. Essential amino acids （EAA） accounted for 49% of total amino acid and the ratio of EAA and non essential ones was 0.98. According to AAS and CS, the first and second limited amino acid were methionine （Met）＋cystine（Cys） and threonine（Thr） respectively. EAA I was 76.16. Mineral ele- ments and vitamins were rich in queenbee larvae. Queenbee larvae is a new resource food with richer nutrition and has vast prospects for developing and application.
