摘    要:葡萄中的糖种类与含量对浆果品质及葡萄酒的质量具有重要影响,因此关于葡萄果实糖分的研究就显得尤为重要.该文就果实中糖分的生理功能、糖分对葡萄浆果品质及葡萄酒质量的影响以及蔗糖代谢相关酶在果实糖分积累中的作用等方面进行了研究,以期为这一领域的深入研究提供一定的理论依据.

Abstract:The type and content of sugar in grape berries have an important influence for the quality of berries and wine.Therefore,the research about the grape sugar content is particularly significant.This review was written for a brief summarization of physiological functions of sugar in fruit,the sugar's influence for quality of berries and wine,the functions of sucrose-metabolizing enzyme in fruit sugar accumulation,to provide a theoretical basis for further research in this field.
