摘    要:以10个石榴品种为试材,研究其不同发育期果实果汁中花青苷含量及品质指标的变化,结果表明:随着天数和果汁颜色的增加,石榴汁中花青苷含量、百粒重、可溶性固形物含量和出汁率均在10月5日时达到最高;大青皮酸果汁中花青苷含量最高,三白最低,不同石榴品种中的花青苷含量差异性均显著;不同石榴果实百粒重之间均成极显著差异,大马牙甜百粒重和出汁率均最高,与其它品种差异性显著;大青皮酸果实中可溶性固形物含量最高(17.1%),与其它品种均成显著性差异。

Abstract:Change of anthocyanin content in juice and quality index were studied in ten pomegranate cultivars.
