| 摘 要： | 木本蔬菜是我国林业生产中极具开发前景的一种资源。文中概述了我国常见的数十种木本蔬菜资源的分布、食用价值和三大加工工艺流程，简要分析了开发利用需采取的对策。

| Abstract: | Woody vegetables are some valuable resources with large area and exploitation potentials in China.There are 110 species of common sight woody vegetables in China.These vegetables can be subdivided into four categories:leaf blade,stalk,blossom and fruits vegetables.The authors introduced woody vegetables except fruit vegetables in China.An introduction was given to the natural distribution,biological characteristics,and cooking methods.The processing technologies of vegetables include mainly pickling,tinning,and dehydrating.It was also suggested to utilize the resources properly. |
