不同取代度玉米辛烯基琥珀酸淀粉酯颗粒结构表征研究

利用红外光谱分析仪、X-射线衍射分析仪、偏光显微镜及扫描电子显微镜对不同取代度马铃薯淀粉辛烯基琥珀酸淀粉酯的物理、化学结构进行了表征比较.马铃薯淀粉经辛烯基琥珀酸酐(OSA)处理后,随着马铃薯淀粉取代度的增加:红外光谱图在1 724 am-1和1 565 cm-1处产生了吸收峰,并与608 cm-1的吸收峰逐渐加强;X射线衍射图中淀粉微晶结构略有增加,亚微晶结构相对减少,总结晶度下降,但淀粉的结晶类型未改变;偏光显微镜观察显示部分淀粉颗粒偏光十字开始消失或者变的模糊,脐点处随之发生爆裂,裂缝甚至沿脐点向外扩大;扫描电镜观察显示淀粉颗粒表面被腐蚀程度逐渐增强.
