黄石市蔬菜硝酸盐污染现状及评价

摘    要:调查了黄石市主要蔬菜品种的硝酸盐污染状况。结果表明,蔬菜的种类、品种及不同部位间硝酸盐含量差异较大,其中苋菜的硝酸盐含量最高;不同种类蔬菜硝酸盐含量为根菜类叶菜类甘蓝类薯芋类豆类茄果类瓜类;不同部位的硝酸盐累积量为根系茎叶瓜(花、果),叶柄叶片,瓜果皮瓜果肉。食品卫生标准评价表明,黄石市主要蔬菜中根菜类、叶菜类、甘蓝类、薯芋类、葱蒜类、豆类平均含量均已超过污染水平,而茄果类、瓜菜类、水生类、芽菜类、食用菌类和笋类硝酸盐含量较低,食用安全。

Abstract:The nitrate contamination of main vegetables in Huangshi was investigated and evaluated with the standards convered.The results showed that the differences in nitrate accumulation occurred among species.Cultivars and parts of some vegetables were highly significant. Edible amaranth accumulated the higher concentration of nitrates.
