摘    要:研究了不同时期采收的南果梨果实后熟过程中糖分变化规律,结果表明:不同时期采收的南果梨在后熟过程中,果实中的果糖、葡萄糖、蔗糖和总糖的含量呈“上升-下降”的趋势,并且达到高峰的时间不同;淀粉被快速降解;山梨醇含量始终呈下降的趋势;晚采收的果实,各种糖分及总糖的含量达到高峰所需时间较短并且含量高于早采收的果实,维持高峰时间的时间长;不同时期采收影响南果梨后熟过程中的糖分组成及含量。

Abstract:Study Nanguo pear was used to study on the change about sugar content of different harvest times during after-ripneing, fruit was placed in room temperature and test sugar component and content interval 5 days, the results showed that: Nanguo pear in diffferent harvest time, its content of fructose, glucose, sucrose and total sugar showed ‘ up-down ’ trend in after-ripening, sugar components reach peak need different time. Starch degraded in short time. Content of sorbitol showed down trend. Nanguo pear of late-harvest, its content of sugar component, total sugar reach high value in short time, and its contents were higher than early harvest and maintenance long period peak. Different harvest time effect content and components of sugar, late harvest properly benefit the raising of content of sugar during after-ripening.
