中国传统乳制品中乳酸菌和酵母菌的分离鉴定

摘    要:传统乳制品是我国内蒙古、西藏等省的牧民生活中不可缺少的食品,然而传统乳制品中的微生物的种类却很少有人关注。为了研究中国传统乳制品中乳酸菌和酵母菌的种类,从内蒙古海拉尔地区采集了10个传统乳制品样品,通过各种生化鉴定的实验方法,共分离得到16株乳酸菌,11株酵母菌,其中干酪乳杆菌2株,发酵乳杆菌1株,粪肠球菌6株,屎肠球菌2株,野生链球菌5株,酿酒酵母2株,马克斯克鲁维酵母7株,毕赤酵母2株。

Abstract:In this paper,16 strains of lactic acid bacteria and 11 strains of yeasts were isolated from 10 samples of traditional indigenous dairy products collected from Neimenggu Hailaer,including 2 strains of Lactobacillus casei,1 strain of Lactobacillu fermentum,1 strain of Enterococcus faecalis,2 strains of Enterococcus faeclum,5 strains of Streptococcus ferus,2 strains of Saccharomyces cerevisiace,7 strains of Kluyveromyces marxianus,2 strains of Pichia fermentan.
