| 摘 要： | 本文论述了大豆中抗营养因子及膨化对其影响。蛋白酶抑制因子可抑制胰蛋白酶和糜蛋白酶活性,降低蛋白质的消化、吸收和利用,大豆抗原可引起断奶仔猪的消化道过敏反应。膨化可失活大豆蛋白酶抑制因子,降低大豆抗原含量。

| Abstract: | The antinutritional factors of soy and influence of extrusion were reviewed in this paper.Protease inhibitors could inhibit the activity of trypsin and chymotrypsin,decrease the digestion,absorbability and utilizations.Glycinin could arise immune response in the intestine of weaning piglet.Extrusion could decrease the activity of protease inhibitor and content of glycinin soy. |
