美拉德反应产物的抗氧化功能

摘    要:美拉德反应产物(MRPs)的抗氧化功能直到20世纪80年代才受到重视,研究表明其抗氧化性能良好,有些组分的抗氧化效果可以与目前常用的抗氧化剂相比,显示出良好的应用前景,综述了美拉德反应的机理和MRPs的抗氧化功能。

Abstract:Only until the 80s of 20th century,the anti-oxidation function of Maillard reaction products(MRPs) was paid more attention.Research showed that its anti-oxidation function was good.And some of the anti-oxidation effects of components were equivalent to antioxidants often used at present,which showed good reaction prospect.The antioxidation of MRPs and the mechanism of Maillard reaction were reviewed.
