黄粉虫能量棒的研制

摘    要:以小麦粉、黄粉虫粉末及其他辅料研制黄粉虫能量棒。在单因素试验的基础上,通过正交试验对黄粉虫能量棒的配方进行优化。结果表明,黄粉虫能量棒的最佳配方为:小麦粉250 g、黄粉虫100 g、色拉油20 g、白砂糖80 g、蛋液50 g、食盐1.5 g、小苏打1.5 g,按此配方制作的产品风味独特,含有黄粉虫的天然香气,色泽呈金黄色,口感细腻松脆,是一款营养全面、健康便携的能量棒新产品。

Abstract:The Tenebrio molitor energy bar was developed using wheat flour, Tenebrio molitor powder and other accessories. The formula of Tenebrio molitor energy bar was optimized by single factor and orthogonal test. The results showed that the optimal formula of Tenebrio molitor energy bar was: wheat flour 250 g, Tenebrio molitor 100 g, salad oil 20 g, sugar 80 g, egg liquid 50 g, salt 1.5 g and baking soda 1.5 g. Under these conditions, the product had natural aroma of Tenebrio molitor, golden color and crisp taste. It was a nutritious, healthy and portable product.
