摘    要:用气相色谱法分析了斗鸡,艾维茵肉鸡及其杂交一代鸡肌肉中的脂肪酸组成。结果表明,不同品种鸡肉中脂肪酸组成多数有差异,且因周龄不同而有一定的变化。不饱和脂肪酸随周龄的增加而增式,斗鸡增加的最少,艾维茵鸡增加的幅度最大。斗鸡及其杂交一代鸡的亚油酸含量8周时分别高于艾维茵肉鸡31.07%和33.43%,12周时趋于一致,表明斗鸡及其杂交一代鸡的脂肪品质高于区维茵肉鸡。

Abstract:Fatty acid composition in muscle tissues of chicken form Henan Cock Fighting, Avian Chicken and their F1 were analyzed by use of Gas Chromatorgraphy. The result showed that fatty aeid composition were mostly different hetween breeds and that there were some relation with Wk of age which the more weeks the higher percentage of unsaturated fatty acid(UFA), when, the in creased rate of UFA among three breeds were that Avian Chicken is the first one(l O. 77% )and Cock Fighting is last one(1. 01% ),hut the percentage of linoleic acid(essential fatty acid)of either Cock Fighting or F1 were more than that in Avian at 8Wk 0f age and the increased percentage were respectively 31. 07% and 33. 43%. Meanwhile, There was a same tendency at 12 Wk of age as at 8 Wk of age. In summary the analysis showed that both of cock Fighting and F1 were superior to in Avian on the fatty quality in muscle tissues.
